Fluffy Pancakes

A good Sunday breakfast cannot go without pancakes. Here's the recipe to my all time favorite fluffy pancakes.
Using buttermilk in the recipe will give you a more finer and fluffier texture to the cakes.
  Enjoy.

RECIPE

INGREDIENTS:

3/4 cup milk.

1 teaspoon lemon.

1 cup all purpose flour.

1 large egg.

2 tablespoon white sugar.

1 teaspoon baking powder.

1/2 teaspoon baking soda.

A pinch of salt.

2 tablespoon melted butter.

Extra butter for buttering the pan and for while serving.

INSTRUCTION:

1. Heat the milk and add lemon juice to make buttermilk.

2. In a bowl evenly mix together flour, baking powder, baking soda, sugar and salt.

3. Whisk together butter and egg into the buttermilk.

4. Slowly pour the mixture of dry ingredients into the wet ingredients and whisk well until no lumps remain.

5. Set aside for 10 minutes so the batter can develop and rise.

6. Heat a skillet or pan. When the pan gets hot enough butter the pan and pour 2 tablespoon of batter on the pan.

Cook on low flame.

When bubbles appear on top on the pancake, turn it and let the other side cook evenly.

Stack your pancakes and serve hot with a whopping serving of butter, honey/maple syrup, ice cream or whipping cream and fresh fruits.

For a healthier option go for Greek yogurt and fresh fruits.
