Fried Chicken Bites


Before you get started on this one let me tell you before hand this is gonna be messy; or is at least with me. Although it's kinda fun, not so much when you gotta clean it up. I feel like I'm pretty much platonic with most of my posts. I mean I get right down to talking business (I really just mean food). I barely ever write about my day or what I'm up to. I do not know if that's a good thing or bad but I'd really love to hear it from you guys. Anyway, Won't keep you waiting any longer. Scroll down for recipe. 




RECIPE

INGREDIENTS: 

250 gm boneless chicken (cubed)

Marinade:
1 cup milk.
1/4 tsp chili powder
1/4 tsp pepper powder
1/2 tsp salt
1 tsp ginger-garlic paste

Flour Coating:
1 cup all purpose flour
1 1/2 tsp salt
1/2 tsp chili powder
1/2 tsp pepper powder
1 tsp oregano
1/2 tsp chili flakes

Others: 
1 large egg 
2 cups coarse breadcrumbs
Oil for deep frying

INSTRUCTIONS:
1. In a bowl large bowl mix together chicken and all the ingredients from the marinade. 
2. Let the chicken marinate for about an hour. If you're in a rush to get these fried bites on the plate, cut short this step to 15 minutes.
3. In another large bowl combine together flour, oregano, salt, chili powder, pepper powder and chili flakes. 
4. In a separate bowl get the breadcrumbs. If you don't have breadcrumbs at hand just toast a few slices of bread and blend them to get a coarse texture. 
5. Once the chicken is marinated separate the chicken pieces from the milk. Do not discard the remaining milk.
6. In a bowl whisk together a large egg along with the remainder of the spiced milk from the chicken marinade.
7. Take a cube of chicken and coat it first with flour, then with the egg and milk mixture, and finally coat it with breadcrumbs.
8. Repeat the same with all the chicken pieces and arrange on a baking sheet. 
9. Heat oil in a frying pan. To check if the oil is hot enough drop in a breadcrumb, if the breadcrumb  crackles and rises to the surface of the pan immediately you may begin.
10. Deep fry the chicken pieces on medium flame until gold brown and crisp.




Enjoy these crowd pleasing bites with lemon mayon or cucumber yoghurt dip. Cucumber yoghurt dip works very well with these bite sized chicken fries.
