Classic Mint Pesto!


Do you love pesto?
That dark green paste that makes your pasta taste heavenly? Well I definitely do. There isn't as so much  pesto cannot do. It goes pleasingly well with your favorite pasta or burger and also you can use it on your personal take of classic Italian pizza. Substitute it as a dip for your fried potato wedges and you're good to go. You can even use it as  marinade.
I've tried quite a few combinations of pesto by now and I didn't once cross paths with one that included mint (My favorite herb) at its heart as a key element. I took it upon myself to incorporate my love for mint in pesto. And hallelujah! did it turn out any good.
Not only did I like it I loved it, even more so than Basil pesto. Maybe that is just because of my biased inclination towards mint but nevertheless. Being my first blog post that is I think this is a perfect recipe to post. Something basic, easy and that can be made any day and enjoyed with your favorite kebab or used as dressing for your salad.





             RECIPE                                                                                  
Ingredients

2 cups fresh Mint Leaves
1/4 cup Almonds
2 cloves of Garlic
1/2 cup Olive Oil
1 tbsp Lemon Juice
1 fat pinch of salt
1 green chili (optional)
1/2 cup Parmesan or Perocino cheese (optional)


Instructions 

1. In a food processor blend together almonds, chili and garlic until coarse.
2. Add in the mint leaves, lemon juice, salt and blend it for a second or two.
3. Pour in the olive oil and blend until everything is fully incorporated.
4. Mix in the finely grated cheese.
Enjoy.


Note : If you wish to store for later use secure in a dry air tight container and store up to a few weeks.
